Pambazos!

On my last Saturday in Mexico City, I was at Alejandro's house.  We were planning on going back to the apartment that afternoon, but Alejandro's nephew Ezra told him, "You can't leave yet. Don't tell Bill, but we're have 'pambazos' for dinner!"

I wrote about "pambazos" once before.  It is a traditional Mexican sandwich, usually filled with potatoes and sausage with garnishes of cheese, "crema", "salsa", and shredded lettuce.  The name comes from "pan bajo"... a "low class" bread which is very dry.  The entire sandwich is then in a warm, red pepper sauce made with "chile guajillo", a medium-hot pepper.  The sandwich is then fried until the top and bottom are crispy.  

I have had these sandwiches in a couple of restaurants in Mexico City, and they are very good.  Alejandro's sister found a little place in the neighborhood where a "señora" makes and sells home-made "pambazos".

So, we stayed for dinner.  We each had two "pambazos", which were definitely enough to fill us up.  They were, without doubt, the best that I have ever had.
