This past week I decided to make some more salsa. I pulled out a trusty cookbook that I have had for decades... "The Complete Book of Mexican Cooking" by Elisabeth Lambert Ortiz. It is a collection of authentic Mexican cuisine... not Tex-Mex cooking.
I decided to make a salsa I had not made in a while... chipotle sauce. (In case you don't know, chipotles are smoked jalapeño peppers.) As you can see the page is stained from years of use.
I wanted to make some salsa to freeze for future use, so I tripled the recipe. I peeled the tomatoes (scalding them in hot water), but I can't be bothered seeding them. I bought ground chipotles so I didn't have to chop them.
Unlike some salsas, the sauce is cooked.
